The Instant Muffin by Chef Saveena.

The Instant Muffin

 Ingredients:

1 tbsp Maida
1 tbsp castor sugar
1/2 tbsp cocoa powder
 1/2 tsp instant coffee powder
1/2 an egg beaten
1 tsp milk
1 tbsp refined oil
1 tsp chocolate sauce
Chocolate chips or nuts (optional)

Preparation:


1.      Vigorously mix all these in the coffee mug (ensure there aren't any lumps)
2.      pop in the microwave for 4 minutes (regular oven for 15 minutes)

My Style Goat Meat Momo Recipie.





Tibetan Recipes Momos


Ingredients for Dough:

To make about 30 Momos for 3 to 4 people:

* 5 cups of plain flour (Maida)
* 1/2 Cup warm milk
* Warm water (as required)
 
The Dough :

1. Mix the flour with first the warm milk and then keep adding warm water together to make the nice firm dough (not very tight that the edges break and not too soft that its sticky..get this right !!). mix well with spoon when gradually poring water then knead well to create a good dough its a good workout for your arms :-)

2. Rest the dough for about 30 mins.

3. Take the dough and roll it into a even cylinder roll then cut into equal portions and rolled into little balls of dough and one by one roll them with a bit of flour so they don't stick to table or rolling pin and roll out nice little circles about 3" x 3" each.

Ingredients for the Filling :


* 500 Grams of meat finely chopped or hand minced ( try and avoid machine minced !!)

* 1 onion finely chopped
* 1 tbsp of Salt
* 2 tbsp of Soya sauce
* 1/2 inch of finely chopped ginger
* 5 Cloves of Ginger
* 3 tbsp of finely chopped cauliflower
* 1/2 tsp of finely chopped celery
* 1 tsp of finely chopped fresh coriander

 
1. In a bowl mix all the ingredients togather and mix well as you will knead the dough, don't punch it okay !!

Are you doubtful about the salt...Well don't add more okay !!

2. With a teaspoon scoop a small amount of the meat mix onto one of the circular pieces of dough.

3. With the right hand, start to close the piece of dough around the meat while pushing the meat back in with the left thumb as shown. All the while you turn the momo with the right hand eventually making a nice circular shape.

Keep turning and pinching the edges of the momo until it looks somewhat like this.You can also make momos in a half moon shape also.

As you can tell from the sad and deformed momos on the left side of this picture, I haven't quite mastered this art form yet. It takes a lot of practice !!!

Now Cook :
Time to cook these delicacies. In a momo or vegetable or electrical steamer , add a few inches of water, set the momo trays in and put the top on and cook for about 15 minutes. It's a good idea to set a timer as you might get distracted, especially if your house.

 The Momo's are Ready !!

The Momo Sauce :

Do this sauce two to three hours before you start making momo's.

Ingredients :
* 3 big full tomatoes ( blanched for 30 mins) - Not peeled or chopped
* 2  tbsp of light soya sauce
* 1 tbsp of tabasco sauce or any hot pepper sauce
* 1 tsp ajinamoto
* 6 Mint Leaves
* 3 tbsp of fresh chopped cucumber
* & Lots and Lots of Love !!!

Put all of the things together in a mixer or blend it till it forms into a sauce like mixture... You are Done !!

Cooking Tips " Always refer these ".

  • If you add vinegar in boiling water for boiled eggs, egg shell will never crack.
  • If the curd is really sour and you have to use it for gravy, whisk it and in half hour water will come up, throw that water and Dahi is ready to use.
  • If you want to reuse the fish cooked oil just fry some tamarind in it and the smell and flavor of fish will go away-you can use the oil now.
  • Garlic should always be peeled before 7 to 8 min of chopping as this process increases the flavor
  • Onion should be peeled and instantly cut because it starts losing its flavor
  • When you are cooking green leafy vegetables never cover the pan while cooking because the steam that condenses contains toxins which needs to evaporate.
  • Best way to store green leafy vegetables and fresh herbs is to roll it in newspaper or brown paper bag and place that in a plastic bag and keep it in the refrigerator.
  • When combining dry things with liquid things, always sprinkle the dry ingredients on the surface instead of dunking it in at once, this avoids the batter from getting lumpy and product getting heavy. Eg. Dry fruits in a cake batter.
